Chickpea Blondies
When you're craving cookies but you don't want to add to your midsection, these chickpea blondies are a great option! They are tasty and sweet while remaining healthy and low fat! Even my picky little eaters asked for seconds, and that's saying a lot!
Equipment
- Blender or Food Processor
Ingredients
- 1 can chickpeas
- ¼ teaspoon baking powder
- ¼ tsp baking soda
- ⅓ cup maple syrup
- ¼ cup creamy peanut butter
- 1 teaspoon pure vanilla extract
- ¼ teaspoon salt
- ½ cup almond flour
- 1 large egg
- ½ cup chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees
- Drain and rinse chickpeas
- Place chickpeas on a paper towel and using another paper towel, dry chickpeas using a rubbing motion
- This will help remove the skins; discard the skins
- Place dry chickpeas in blender or food processor with all ingredients except chocolate chips and blend until smooth
- Stir in chocolate chips (optional)
- Pour batter into greased 8x8 baking dish and bake for 25 minutes
- Allow to cool completely before serving so they are set (otherwise they will fall apart)
