Crispy Cornmeal Oven Fried Chicken {gluten free, low fat, healthy}
Crispy chicken in the oven? YESSSS!
Ingredients
- 1 pound boneless skinless chicken breasts, sliced thin or tenderloins
- 1 ½ cups gluten free cornmeal
- 1 ½ teaspoon garlic powder
- 1 ½ teaspoon salt
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
- 1 cup buttermilk
- splash hot sauce
Instructions
- Preheat oven to 375 degrees
- In a shallow dish, combine buttermilk and hot sauce, and stir
- In a second shallow dish, add cornmeal, garlic powder, salt, onion powder, paprika, and pepper, and stir to combine
- Dip chicken breasts into buttermilk and then into breading mixture, making sure to thoroughly coat each piece on all sides
- Arrange breaded chicken breasts on greased cookie sheet (use spray olive or avocado oil)
- Spray the tops of breaded chicken with olive or avocado oil spray
- Baket at 375 for 8-12 minutes (longer for thicker breasts, shorter for thin breasts)
- Flip chicken breasts over and spray with olive or avocado oil spray, and bake another 8 minutes
- Turn oven broiler to HI, and broil each side of the chicken for 1-2 minutes, until golden brown and crispy
- Serve immediately!
