    2 Ingredient Gluten Free Bagel Recipe

    The 2 ingredient bagel trend is one of the best food trends to come out of social media. With just a few simple ingredients, you can have homemade bagels that are packed with protein and taste better than the store-bought kind. And yes, this trend can easily be made gluten free! So let's get to this 2 Ingredient Gluten Free Bagel Recipe so you can feel Iike you've just stepped out of a bagel shop without having to leave your house!

    Ingredients

    Gluten free flour: If you've been gluten free for any length of time, you know that all gluten free all purpose flour is NOT created equal. Cup4Cup (available at Walmart, Target, and Amazon) and King Arthur Measure for Measure are my two tried and true gluten free flours for both taste and texture. Unfortunately, Bob's Red Mill 1:1 Gluten Free Flour turned out gummy and the flavor was overwhelmingly "flour-y" in this 2 ingredient gluten free bagel recipe. Almond flour does work with this recipe, so if you're trying to keep things lower in carbs, almond flour is a great option

    Greek yogurt: Plain greek yogurt is a star ingredient in this gluten-free bagel recipe. Some greek yogurts are gritty, so I do recommend using a good brand, like Fage or Greek Gods. I've used both 0% and 5% Fage greek yogurts for this recipe. To keep it lower in fat, use 0%, but the 5% gives a better texture and flavor

    Baking powder: I know I know, this is a third ingredient, but I promise you it's necessary. Baking powder helps to make the dough lighter and fluffier. And if you've ever had gluten-free bread, then you know that it can be pretty dense, so don't skip this ingredient so you'll have a nice soft and fluffy bagel

    Salt: I use a full teaspoon of salt in my bagels because I'm not afraid of flavor, but I know some people don't like using salt. If that's you, either omit it or use less

    Egg white: The egg wash is what gives these bagels their golden color and delicious chewy crust. If you're allergic to eggs, brush with milk, maple syrup, or honey. Keep in mind that maple syrup and honey will add a sweetness to your bagels

    Instructions with step-by-step photos:

    Preheat your oven to 375°F

    Whisk together flour, baking powder, and salt (dry ingredients) in a large bowl. Then stir in the yogurt (aka, your wet ingredients). Stir with a spoon until ingredients are incorporated and you have a shaggy dough

    Then, using your hands, knead the ingredients until a dough forms and roll into a ball (you may need a dusting of flour to keep the dough from sticking to your hands)

    Turn the bagel dough ball out onto a piece of parchment paper and cut into 4 equal pieces (or 8 pieces for mini bagels)

    Roll each piece into a rope shape about 1 inch thick (mini bagels will be thinner and cook more quickly, so keep that in mind)

    Connect the ends of the rope to for a bagel shape

    In a small bowl or ramekin, whisk together 1 egg white and 1 tablespoon water. Using a pastry brush, brush the top of the dough with egg whites water mixture, aka egg wash) and sprinkle with your favorite topping (see options below)

    Bake in preheated oven for 20-22 minutes until the tops and bottoms are golden brown

    Allow these chewy gluten-free bagels to cool before slicing them and smearing with a thick layer of cream cheese or butter and jelly or peanut butter or gluten free white country gravy (the possibilities are endless)

    Toppings

    All of the reels and TikTok videos I've seen of these 2 ingredient bagels use everything bagel seasoning. Sprinkle generously prior to baking.

    Cinnamon and brown sugar. Add a layer of butter to the tops of the bagels and sprinkle this on at the end so the sugar doesn't burn in the oven.

    Poppy seeds. I like to add some lemon zest to the bagel dough to create lemon poppyseed bagels. Add the poppy seeds prior to baking.

    Sesame seeds. Sprinkle on after egg wash and before baking.

    Smother with gluten free white country gravy for a healthier take on gluten free biscuits and gravy

    Butter and jelly. This is probably my favorite way to eat these bagels

    Peanut butter and sometimes a sprinkling of chocolate chips

    Honey pecan cream cheese

    Onion and chive cream cheese

    Plain cream cheese

    However you choose to top them, these homemade gluten-free bagels are sure to become one of your go to breakfast recipes.

    Storage

    Store leftover bagels in an airtight container or wrapped in plastic wrap in the fridge for up to 2 days. Toast under your oven broiler or in a toaster oven and they taste like fresh bagels the next day.
