spray avocado oil

Instructions
Separate 3 eggs whites and place in a small mixing bowl
Add one whole egg to the egg whites and whisk together
Stir in salt, pepper, and basil (set aside)
Cut tomatoes in half lengthwise and set aside
Heat a medium skillet to medium heat and spray with avocado oil
Add spinach and tomatoes to skillet and saute until spinach is wilted
Add egg mixture to skillet with spinach and tomatoes and cook until eggs are cooked through
Top with 2 tablespoon feta cheese and enjoy a tasty scramble with half the fat!
