Equipment

  • Blender or Food Processor

Ingredients
  

  • ½ cup + 1 tablespoon gluten free oats
  • ½ teaspoon baking powder
  • 1 serving vanilla protein powder see above for my favorite
  • 1 serving collagen peptides
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • cup unsweetened almond milk or milk of your choice
  • 1 large egg
  • ¼ cup blueberries fresh or frozen

Instructions
 

  • Preheat oven to 350°F
  • Add everything but the blueberries to a blender or food processor and blend until smooth
  • Pour batter into a small greased baking dish (7 ounces)
  • Stir in blueberries
  • Bake at 350°F for 20-24 minutes, depending on your oven 
  • Allow to cool 5 minutes before digging in

  • This recipe can be double or tripled and baked in larger quantities to feed the whole family!
