Chocolate Peanut Butter Granola {healthy, gluten free, vegan}

Healthy granola that tastes just like no bake cookies!

Ingredients
  

  • 2 cups gluten free rolled oats
  • ¼ cup slivered almonds
  • ¼ cup coconut sugar
  • 2 tablespoons cocoa powder
  • pinch salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons flaxseed meal
  • 2 tablespoons chia seeds
  • 2 tablespoons unsweetened shredded coconut
  • ½ cup melted coconut oil ¼ cup solid
  • ¼ cup + 1 tablespoon maple syrup
  • ½ cup creamy peanut butter

Instructions
 

  • Preheat oven to 300°F
  • In a microwave safe dish, combine melted coconut oil, peanut butter, maple syrup, and vanilla extract and stir to combine
  • Add oats, almonds, coconut sugar, cocoa powder, salt, flaxseed meal, chia seeds, and shredded coconut to a large mixing bowl
  • Pour coconut oil mixture over dry ingredients and stir to combine
  • Spread mixture out onto baking sheet lined with parchment paper and press into a thin layer
  • Bake at 300° for 25 minutes
  • Allow to cool for 1 hour before breaking apart
  • Granola will still be soft in the middle to give the texture of no bake cookies!
  • Store in an airtight container in fridge for up to 1 week (if it lasts that long!)
