Skinny Lasagna Roll Ups

When you’re craving all of the flavors of lasagna but want something a little lighter, give these Gluten Free Skinny Lasagna Roll Ups a try! You can make them with regular or gluten free lasagna noodles, and they’re sure to be a big hit with your whole family! I’ve even included a dairy free option!

Ingredients
  

  • 10 cooked lasagna noodles gluten free
  • 1 pound lean ground beef
  • 15 ounces part skim ricotta cheese
  • ¼ cup grated parmesan cheese
  • 2 tablespoons dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups Rao's marinara, divided or your favorite marinara

Instructions
 

  • Preheat oven to 375°F
  • Boil lasagna noodles according to package directions, drain, and allow to cool for about 5 minutes. Make extra noodles because some will inevitably break
  • Brown ground beef in a medium skillet over medium high heat until cooked through 
  • In a large mixing bowl, add ricotta, parmesan, parsley, salt, pepper, and cooked ground beef. Stir to combine
  • Add 1 cup marinara to a 9x13 baking dish and spread to coat the bottom 
  • Scoop ⅓ cup of mixture and spread onto lasagna noodle. Roll the noodle up and place it in the baking dish
  • Continue for the rest of the mixture and noodles. It will make about 8-10 roll ups
  • Pour remaining 2 cups of marinara over roll ups, cover dish with foil, and bake at 375° for 40 minutes
  • Remove foil and bake another 3-5 minutes
  • Sprinkle with parsley and parmesan if you’d like for serving!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in microwave safe dish.
