Beef & Broccoli Stir Fry

Ingredients
  

  • 1 pound stir fry beef or beef strips see notes above for alternative
  • avocado oil or olive oil spray
  • 2 cups broccoli florets
  • 1 cup uncooked Jasmine rice
  • ½ cup coconut aminos
  • tablespoons honey
  • ¾ cups water divided (or beef bone broth)
  • 1 tablespoon cornstarch
  • 1 tablespoon grated ginger
  • 1 tablespoon minced garlic about 3 cloves
  • ¼ teaspoon black pepper
  • ¼-1/2 teaspoon crushed red pepper flakes optional, adds heat!
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons sesame oil
  • sesame seeds for serving
  • 1 cup beef bone broth FOR SLOW COOKER INSTRUCTIONS ONLY

Instructions
 

Stovetop Directions:

  • Spray a deep skillet with oil and add stir fry beef. Cook over medium heat until cooked through and no long pink 
  • As beef is cooking, add broccoli florets to a microwave safe bowl and pour in ¼ cup water. Microwave on high for 3 minutes. Drain water and add cooked broccoli to skillet with cooked beef
  • Cook rice according to package directions or use rice pouches for a quick and easy option
  • Make the sauce: add coconut aminos, ½ cup water, cornstarch, ginger, garlic, pepper, crushed red pepper flakes, vinegar, honey, and sesame oil to a small saucepan. Bring to a boil, stirring often, and then reduce heat to low. Simmer until sauce begins to thicken and sticks to the back of your spoon. 
  • Pour sauce over beef and broccoli and stir to combine
  • Serve beef and broccoli stir fry over cooked Jasmine rice and top with sesame seeds

Slow Cooker Directions:

  • Add stir fry beef, 1 cup beef bone broth, coconut aminos, cornstarch, ginger, garlic, pepper, crushed red pepper flakes, vinegar, honey, and sesame oil to slow cooker, and stir to combine. Cook on high for 4 hours or low for 6 hours. 
  • Add broccoli 1 hour before serving so it can become tender OR add broccoli and ¼ cup water to microwave safe bowl and cook on high for 3 minutes and then add to the slow cooker 30 minutes before serving
  • Make rice according to package directions or use rice pouches for a quick and easy option 
  • Serve Beef & Broccoli Stir Fry over Jasmine rice and top with sesame seeds
