1poundstir fry beef or beef stripssee notes above for alternative
avocado oil or olive oil spray
2cupsbroccoli florets
1cupuncooked Jasmine rice
½cupcoconut aminos
1½tablespoonshoney
¾cupswaterdivided (or beef bone broth)
1tablespooncornstarch
1tablespoongrated ginger
1tablespoonminced garlicabout 3 cloves
¼teaspoonblack pepper
¼-1/2teaspooncrushed red pepper flakesoptional, adds heat!
2tablespoonsrice wine vinegar
2tablespoonssesame oil
sesame seedsfor serving
1cupbeef bone broth FOR SLOW COOKER INSTRUCTIONS ONLY
Instructions
Stovetop Directions:
Spray a deep skillet with oil and add stir fry beef. Cook over medium heat until cooked through and no long pink
As beef is cooking, add broccoli florets to a microwave safe bowl and pour in ¼ cup water. Microwave on high for 3 minutes. Drain water and add cooked broccoli to skillet with cooked beef
Cook rice according to package directions or use rice pouches for a quick and easy option
Make the sauce: add coconut aminos, ½ cup water, cornstarch, ginger, garlic, pepper, crushed red pepper flakes, vinegar, honey, and sesame oil to a small saucepan. Bring to a boil, stirring often, and then reduce heat to low. Simmer until sauce begins to thicken and sticks to the back of your spoon.
Pour sauce over beef and broccoli and stir to combine
Serve beef and broccoli stir fry over cooked Jasmine rice and top with sesame seeds
Slow Cooker Directions:
Add stir fry beef, 1 cup beef bone broth, coconut aminos, cornstarch, ginger, garlic, pepper, crushed red pepper flakes, vinegar, honey, and sesame oil to slow cooker, and stir to combine. Cook on high for 4 hours or low for 6 hours.
Add broccoli 1 hour before serving so it can become tender OR add broccoli and ¼ cup water to microwave safe bowl and cook on high for 3 minutes and then add to the slow cooker 30 minutes before serving
