Coconut Lime Rice

If you’re looking for an easy side dish, this Coconut Lime Rice is it! It’s naturally gluten free and vegan, and it can be made low carb if you substitute cauliflower rice for the white rice! And I can’t forget to mention how delicious it is!

Ingredients
  

  • 1 cup uncooked white rice or uncooked cauliflower rice
  • 1 can lite coconut milk 13-15 ounces
  • juice and zest from 1 lime
  • ½ teaspoon salt
  • Chile Lime Seasoning optional for topping

How to make Coconut Lime Rice

  • Add rice, can of coconut milk, lime juice, lime zest, and salt to a medium saucepan and turn heat to medium-high
  • Bring to a boil. Once it starts to boil, turn heat to low and cover with a lid
  • Cook about 10 minutes on low, until the coconut milk has been absorbed by the rice
  • Makes 4 servings
  • Pairs well with shrimp, fish, and chicken. You could even serve with tofu for a vegan dish. 

How to make Coconut Lime Cauliflower Rice

  • Add fresh or frozen cauliflower rice to medium saucepan with coconut milk, lime juice, lime zest, and salt. Turn heat to medium-high and bring to a boil
  • Reduce heat to low once it starts to boil and cover. Let simmer until cauliflower rice has absorbed the coconut milk. This should take about 10-15 minutes, depending on your stove
  • Stir, sprinkle with Chile Lime seasoning (optional), and serve!
  • Pairs well with shrimp, fish, and chicken. You could even serve with tofu for a vegan or vegetarian dish
