Healthy Tagalong Bites

After I posted my Samoa Energy Bites recipe, I received several requests for a healthy Tagalong, and here it is! These Healthy Tagalong Bites are amazing!!! They are made with simple, clean ingredients, and they pack all of the chocolate peanut buttery goodness you expect! They are gluten free, dairy free, vegan, and they only have 7.5g net carbs per serving, making them perfect for just about everyone to enjoy!

Ingredients
  

  • 1 cup almond flour
  • ½ cup peanut butter
  • tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • pinch salt
  • ½ cup chocolate chips melted

Instructions
 

  • Add almond flour, peanut butter, maple syrup, vanilla, and salt to a medium mixing bowl and stir to combine. Using a cookie scoop or your hands, pinch off about 1 inch of dough and roll into a ball. Place ball on a dish lined with parchment paper. Continue making balls until all dough has been used (makes about 14-16 balls)
  • Place balls in fridge to chill while you melt the chocolate chips. Melt chocolate chips in a microwave safe dish for 1 minute. Stir and put back in microwave for another minute, stir again.
  • Dip balls into chocolate. You can coat half of the ball or the whole ball, it’s up to you!
  • Place back on parchment paper and put back in fridge for chocolate to set up, about 20 minutes
  • Eat up!
  • Store leftovers in an airtight container in the fridge for up to 1 week or freezer for up to 3 months
