Turkey Meatloaf Muffins

If you’re looking for a lazy meatloaf recipe, then look no further! These Turkey Meatloaf Muffins are healthy and ready in 30 minutes! They are gluten free, dairy free, egg free, low carb, and absolutely delicious! My picky toddler even loves them!

Ingredients
  

  • 1 pound lean ground turkey
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons dried minced onion or 1 tablespoon minced shallot
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup bbq sauce

Instructions
 

  • Preheat oven to 400°F
  • Add everything but the bbq sauce to a large mixing bowl and mix together with your hands
  • Separate the meat into 8 equal portions and place them in greased muffin tins
  • Bake at 400° for 20 minutes
  • Pull muffins out of oven and top each meatloaf muffin with ½ tablespoon bbq sauce
  • Place back in oven and bake another 5 minutes
  • Makes 8 2oz Turkey Meatloaf Muffins (4 servings)

Notes

Serving size: 2 turkey meatloaf muffins
Store leftovers in airtight container in fridge for up to 3 days
