1½ cups almond flour ¾ cup coconut sugar ½ cup cocoa powder 1 teaspoon baking powder ½ teaspoon salt ⅓ cup melted coconut oil 2 tablespoons maple syrup ¼ cup unsweetened almond milk 3 large eggs ½ cup mini chocolate chips optional
Preheat oven to 350°F
Add all ingredients to a large mixing bowl and stir until combined. This recipe is easy to mix by hand, so you don’t need to use an electric mixer
Add about 1 tablespoon of batter to greased mini muffin tins
Bake at 350° for about 18-22 minutes (until a toothpick stuck into the center comes out clean)
Allow to cool for 5 minutes before removing from muffin tins
Store in airtight container on counter or in fridge for up to 5 days
