Gluten Free Pineapple Lush Cake

This is the technical name for angel food cake topped with cool whip and crushed pineapple frosting! Fresh berries are often added to give this summer cake a patriotic flair! Whatever you call it, this Gluten Free Pineapple Lush Cake is the dessert for all of your summer cookouts!

Ingredients
  

  • gluten free angel food cake see above for options
  • 16 ounce container Cool Whip thawed
  • 20 ounce can crushed pineapple
  • 3.4 ounce box vanilla puddling mix the smaller one! (optional)
  • fresh berries

Instructions
 

  • Slice angel food cake in half horizontally so you have two equal halves (top and bottom)
  • Mix together thawed cool whip, vanilla pudding mix (just the powder), and crushed pineapple
  • Spread frosting on the bottom half of the cake, then place the top half of the cake on and frost the top and sides
  • Top with fresh berries and serve!
