Chickpea Blondies
When you're craving cookies but you don't want to add to your midsection, these chickpea blondies are a great option! They are tasty and sweet while remaining healthy and low fat! Even my picky little eaters asked for seconds, and that's saying a lot!
1 can chickpeas ¼ teaspoon baking powder ¼ tsp baking soda ⅓ cup maple syrup ¼ cup creamy peanut butter 1 teaspoon pure vanilla extract ¼ teaspoon salt ½ cup almond flour 1 large egg ½ cup chocolate chips (optional)
Preheat oven to 350 degrees
Drain and rinse chickpeas
Place chickpeas on a paper towel and using another paper towel, dry chickpeas using a rubbing motion
This will help remove the skins; discard the skins
Place dry chickpeas in blender or food processor with all ingredients except chocolate chips and blend until smooth
Stir in chocolate chips (optional)
Pour batter into greased 8x8 baking dish and bake for 25 minutes
Allow to cool completely before serving so they are set (otherwise they will fall apart)
