Baked Blueberry Oatmeal {gluten free, healthy, low fat}
This baked oatmeal tastes like a giant blueberry muffin, AND it's healthy!
- ½ cup gluten free oat flour (Bob's Red Mill is great!)
- 1 teaspoon baking powder
- ½ teaspoon pure vanilla extract
- 1 egg
- 3 tablespoon unsweetened almond milk
- 2 tablespoon pure maple syrup
- pinch salt
- ¼ cup blueberries
Preheat oven to 350 degrees
Add all ingredents, except blueberries, to a blender or food processor and blend until combined
Stir in blueberries and transfer batter to greased ramekin or muffin tins
Bake at 350 degrees for 18-20 minutes
Serve warm!
Notes:
- This recipe can be double or tripled and baked in larger quantities to feed the whole family!
- Chocolate chips are a great substitute for the blueberries if you're having a chocolate craving but want to keep it healthy!
