Baked Blueberry Oatmeal {gluten free, healthy, low fat}

This baked oatmeal tastes like a giant blueberry muffin, AND it's healthy!

  • Blender or Food Processor


  • ½ cup gluten free oat flour (Bob's Red Mill is great!)
  • 1 teaspoon baking powder
  • ½ teaspoon pure vanilla extract
  • 1 egg
  • 3 tablespoon unsweetened almond milk
  • 2 tablespoon pure maple syrup
  • pinch salt
  • ¼ cup blueberries


  • Preheat oven to 350 degrees
  • Add all ingredents, except blueberries, to a blender or food processor and blend until combined
  • Stir in blueberries and transfer batter to greased ramekin or muffin tins
  • Bake at 350 degrees for 18-20 minutes
  • Serve warm!


  • This recipe can be double or tripled and baked in larger quantities to feed the whole family!
  • Chocolate chips are a great substitute for the blueberries if you're having a chocolate craving but want to keep it healthy!
