Turkey Meatballs & Asparagus with Dijon Cream Sauce

This Dijon Cream Sauce tastes great on pasta and chicken as well! It's a low carb sauce staple you can whip up easily on a busy night!

Equipment

  • Air fryer

Ingredients
  

For the Meatballs

  • 1 pound lean ground turkey
  • 1 tablespoon dried parsley
  • ½ cup grated parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 large egg
  • 1 teaspoon garlic powder

For the Asparagus

  • 1 pound asparagus
  • salt and pepper to taste
  • spray avocado oil

For the Dijon Cream Sauce

  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 2 tablespoon dijon mustard

Instructions
 

For the Meatballs

  • Preheat oven to 400 degrees
  • Line a baking sheet with aluminum foil or parchment paper
  • Place all meatball ingredients in a large mixing bowl and stir until combined
  • Use a cookie scoop or tablespoon to scoop out mixture and roll into 1 inch balls (makes 16 balls)
  • Place meatballs on prepared baking sheet and bake at 400 degrees for 15-20 minutes
  • Keep meatballs in oven and turn on broiler, broil for 3-5 minutes until meatballs begin to brown
  • Let cool for a few minutes before serving

For the Asparagus

  • Trim and wash asparagus
  • Place clean asparagus in air fryer and spray with avocado oil
  • Season generously with salt and pepper
  • Cook at 400 degrees for 8-10 minutes, until tender

For the Dijon Cream Sauce

  • Add heavy cream to medium sauce pan and turn heat to medium
  • Add in parmesan, garlic powder, and dijon mustard, and whisk together
  • Whisk continuously for about 5 minutes until sauce begins to boil and thicken
  • Top meatballs and asparagus with sauce and serve immediately!

  • The Dijon Cream Sauce can be used as a pasta sauce or served over chicken and potatoes!
