Season pork chops with a sprinkle of salt and pepper
Place pork chops on preheated grill or skillet sprayed with olive or avocado oil
Cook on each side for about 5 minutes until seared, then continue cooking until they reach an internal temp of 145 degrees Farhenheit
Place 2 tablespoon avocado oil and ¼ cup onion in medium skillet and turn heat to medium
Saute onions in oil until they become translucent, about 3-5 minutes
Stir in heavy cream, bone broth, mustard, salt, pepper, and corn starch, and bring to a boil, then reduce heat to low and simmer for 2 minutes
Top cooked pork chops with dijon sauce and serve!
