Greek Pasta Salad {gluten free, healthy}

Ingredients
  

  • 1 8 ounce box gluten free penne pasta I used Explore Cuisine Organic Green Lentil Penne
  • ¼ cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ¾ teaspoon dried oregano
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup crumbled feta cheese
  • ½ cup kalamata olives, pitted and sliced in half lengthwise
  • ¾ cup diced tomatoes I used cherub tomatoes
  • 1 cup diced cucumber about 1 large English cucumber

Instructions
 

  • Cook the pasta according to the package directions. Strain and rinse with cold water, set aside
  • Make the dressing by adding olive oil, vinegar, oregano, salt, and pepper to a small mixing bowl, stir to combine
  • Place the cooled pasta into a large mixing bowl and add the feta, olives, tomatoes, and diced cucumbers
  • Pour the dressing over everything and toss to combine
  • Stores leftovers in an airtight container for up to 3 days
