  • 8 large eggs
  • 4 slices cooked bacon, cut into pieces
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream (or plain Greek yogurt or cottage cheese)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper


  • Preheat oven to 350 degrees
  • Add 8 eggs to medium mixing bowl and whisk to combine
  • Add cheese, sour cream, salt, and pepper, and whisk to combine
  • Chop cooked bacon into bite sized pieces and add to egg mixture, stirring to combine
  • Add egg mixture to greased muffin tins, filling half-full
  • Bake at 350 degrees for 25 minutes (makes 12 egg bites)
  • Store leftovers in airtight container in fridge for up to 3 days
