Low Carb Chicken Cordon Bleu Recipe
Chicken Cordon Bleu is such a classic dish, but it doesn’t get much recognition these days, and it should! I revamped this classic to make it gluten free and keto friendly, and it is out of this world!

4 4oz chicken breasts 2 8oz breasts cut inn half lengthwise works perfectly 4 slices deli ham Boar's Head maple glazed honey coat ham is my favorite 4 slices Swiss cheese salt and pepper to taste 2 tablespoons butter 1 cup heavy cream ½ cup grated parmesan cheese 2 teaspoons dijon mustard ¼ teaspoon black pepper 1 teaspoon cornstarch or xanthan gum
Preheat oven to 400°F
Season both sides of the chicken breasts with salt and pepper to taste
Place seasoned chicken on a greased baking sheet and bake for 12-15 minutes per side, until no longer pink inside
While chicken is baking, make the sauce by melting butter in a medium saucepan and stirring in the heavy cream
Add the parmesan cheese, black pepper, dijon mustard, and cornstarch (or xanthan gum), and stir until cheese has melted and sauce has thickened
After chicken has baked, turn oven broiler to high
Top each cooked chicken breast with one slice of ham and one slice of Swiss cheese
Place back in oven under broiler until cheese has melted
Remove from oven and top with sauce
Serve immediately
