Low Carb Chicken Cordon Bleu Recipe

Chicken Cordon Bleu is such a classic dish, but it doesn’t get much recognition these days, and it should! I revamped this classic to make it gluten free and keto friendly, and it is out of this world!

Ingredients
  

  • 4 4oz chicken breasts 2 8oz breasts cut inn half lengthwise works perfectly
  • 4 slices deli ham Boar's Head maple glazed honey coat ham is my favorite
  • 4 slices Swiss cheese
  • salt and pepper to taste
  • 2 tablespoons butter
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 2 teaspoons dijon mustard
  • ¼ teaspoon black pepper
  • 1 teaspoon cornstarch or xanthan gum

Instructions
 

  • Preheat oven to 400°F
  • Season both sides of the chicken breasts with salt and pepper to taste
  • Place seasoned chicken on a greased baking sheet and bake for 12-15 minutes per side, until no longer pink inside
  • While chicken is baking, make the sauce by melting butter in a medium saucepan and stirring in the heavy cream
  • Add the parmesan cheese, black pepper, dijon mustard, and cornstarch (or xanthan gum), and stir until cheese has melted and sauce has thickened
  • After chicken has baked, turn oven broiler to high 
  • Top each cooked chicken breast with one slice of ham and one slice of Swiss cheese
  • Place back in oven under broiler until cheese has melted
  • Remove from oven and top with sauce
  • Serve immediately
