Samoa Energy Bites

I think we can all agree that it’s hard to resist Girl Scout Cookies! But for some of us, we’re limited on flavors due to allergies and dietary restrictions. And for others, you want the flavors without all of the sugar. In comes these Samoa Energy Bites to save the day for everyone! With all of the flavors of Samoas but created with clean ingredients, these Samoa Energy Bites are a snack you won’t feel bad about eating! They are gluten free, dairy free, vegan, and soy free!

Equipment

  • Food processor or high powered blender/chopper

Ingredients
  

  • 8 ounces pitted medjool dates about 20 dates
  • ½ cup shredded coconut
  • 1 tablespoon almond butter or your favorite nut/sun butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • cup mini chocolate chips melted

Instructions
 

  • Add dates, coconut, almond butter, vanilla, and salt to food processor. Process until a ball of “dough” is formed
  • Using a cookie scoop or your hands, pinch off about 1 tablespoon of “dough” and roll into a ball, repeat for remaining mixture (should make about 12 balls) *You may have to squeeze the ball to get it to stick together 
  • Align balls on a baking sheet lined with parchment paper 
  • Melt the chocolate chips in the microwave for 30 seconds, stir, and melt for another 30 seconds, continuing in 30 second intervals until chocolate has melted. Stir again and using a spoon, drizzle the melted chocolate over the balls 
  • Pop the baking sheet in the fridge for about 30 minutes for chocolate to set and then enjoy! 
  • They keep in the fridge for about a week and in the freezer for up to 3 months in an airtight container
