Keto Cheeseburger Bites

If you’re looking for a fun appetizer to serve at your next party, these Keto Cheeseburger Bites are always a crowd-pleaser! They are easy to put together, and they taste delicious dipped in Thousand Island dressing or ketchup. You can melt the cheese or leave it cubed, and add your favorite burger toppings. And because these cheeseburger bites are cute and fun to eat, it’s a great weeknight meal to share with your kiddos!

Ingredients
  

  • 1 pound lean ground beef
  • 1 teaspoon seasoned salt
  • ¼ teaspoon pepper
  • 14-16 pickle chips
  • 14-16 grape tomatoes
  • 14-16 small pieces of romaine lettuce
  • 14-16 cheddar cheese cubes
  • Thousand Island dressing or ketchup for dipping

Instructions
 

  • Preheat oven to 400°F
  • Add 1 teaspoon seasoned salt and ¼ teaspoon pepper to a mixing bowl with ground beef and combine with a spoon or your hands. Using a cookie scoop or your hands, pinch off about 1 inch of meat and roll into a ball. Then flatten the ball between your hands and place on a baking sheet line with a baking rack (makes 14-16 tiny burgers)
  • Bake burgers at 400° for 20-25 until no longer pink inside
  • If you are choosing to melt the cheese, place one cheese cube on each burger, place back in the oven and bake until cheese has melted
  • Allow burgers to cool for 5 minutes before assembling Keto Cheeseburger Bites
  • Add cherry tomato, pickle chip, and lettuce to toothpick, leaving room for cheese and burger
  • If not melting your cheese, add cheese cube to toothpick followed by burger patty
  • If you melted the cheese, just add the burger patty to the bottom of the toothpick and arrange on a platter. Continue for the rest of the burgers
  • Add dipping sauce to a bowl and serve!
  • These can be made ahead of time. Add everything but the burgers to the toothpicks and place in your fridge. Refrigerate the cooked burgers as well, but keep them separate. Warm the burgers and add them to the toothpicks  just before serving. 
  • 1 pound of ground beef makes 14-16 burger bites

Notes

Store leftovers in airtight container in fridge for up to 2 days.
