Greek Meatballs with Spinach and Feta

These Greek Meatballs with Spinach and Feta are freaking delicious y’all! They are wonderful as an appetizer served with tzatziki sauce. They’re great with a side of white basmati rice. And they are absolutely delicious in a Mediterranean Bowl. Did I mention these meatballs are also gluten free, egg free, and low carb?! Even my picky toddler loves them, and I feel good about letting him eat them because I know they are made with healthier ingredients!

Ingredients
  

  • 1 pound lean ground beef
  • 2 cups loosely packed spinach
  • ½ cup crumbled feta cheese
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parley or 1 tablespoon fresh chopped parsley
  • tzatziki sauce for dipping

Instructions
 

  • Wilt spinach in a skillet with avocado or olive oil spray over medium heat. This should take about 3 minutes
  • Preheat oven to 400°F
  • Add ground beef, salt, pepper, garlic powder, dried parsley, wilted spinach, and feta crumbles to a medium mixing bowl, and mix with clean hands to combine 
  • Using a cookie scoop or your hands, pinch off about 1 inch of meat mixture and roll into a ball. Continue until all meat has been used. Makes about 16 meatballs
  • Place meatballs on baking sheet lined with a baking rack or parchment paper
  • Bake at 400° for about 20-25 minutes, until meatballs have cooked through and are no longer pink 
  • Serve with tzatziki sauce and white basmati rice for a complete meal or add toothpicks to the meatballs and serve with tzatziki sauce for a fun and different appetizer!
