Healthy Mexican Pizza Recipe

OMG y’all!!! When I was growing up, Mexican pizza from Taco Bell was one of my favorite meals! But then I had to give up gluten, and Taco Bell decided without my business, they couldn’t keep the Mexican pizza on the menu anymore…kidding! But in all seriousness, not being able to order a Mexican Pizza has sucked, so I decided to create my own…and I freaking nailed it!!! My hubby says this is one of his new faves, so I’ll be making it a lot from now on!

Ingredients
  

  • 1 pound lean ground turkey
  • 1 packet taco seasoning
  • 1 packet ranch dip mix or ranch seasoning
  • 1 can fat free refried beans 16 ounces (2 cups)
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 8 small-medium flour tortillas

Instructions
 

  • Spray the bottom of a medium skillet with avocado or olive oil spray and turn heat to medium. Add ground turkey and cook until browned throughout.
  • Once meat has finished cooking, turn heat to low, add ¼ cup water, packet of taco seasoning mix and packet of ranch dip mix, and stir to combine. Keep on low heat until ready to assemble your pizzas
  • Empty can of refried beans into a microwave safe bowl and cook on high fro 2 minutes. Stir
  • Spread ½ cup refried beans on a flour tortilla
  • Top the beans with 4 ounces of ground turkey
  • Top the ground turkey with ¼ cup shredded cheddar cheese and place the tortilla in a skillet lightly sprayed with avocado or olive oil. Add another tortilla to the top of the cheese to create a “sandwich”
  • Cook on medium heat until the bottom of the tortilla becomes golden, about 1 minute
  • Carefully flip using a spatula and cook until the other tortilla becomes golden 
  • Remove from heat and top with salsa
  • Repeat for remaining tortillas
  • Makes 4 Gluten Free Mexican Pizzas
  • Add your favorite toppings before serving
