Gluten Free Pork Fried Rice

Ingredients
  

  • 2 cups cooked white rice
  • 1 pound ground pork or diced pork chops (see above)
  • 3 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • cooking oil spray (I use spray avocado oil) or 2 tablespoons avocado oil
  • 2 eggs scrambled
  • ½ cup peas
  • ½ cup carrots
  • ½ cup diced onion
  • salt and pepper to taste

Instructions
 

  • Cook rice according to package directions and set aside
  • Spray a deep skillet or wok with cooking oil (I use avocado oil spray) add eggs, scramble over medium-high heat until cooked through. Transfer to a bowl and set aside
  • Spray that same deep skillet with more cooking spray and add pork, peas, carrots, and onions, and cook over medium heat, stirring often, until the pork is no longer pink and the veggies are tender
  • Add cooked rice to the skillet and stir in coconut aminos and sesame oil
  • Add the scrambled eggs back to the skillet and stir to combine
  • Add salt and pepper to taste and serve immediately
