1 package smoked sausage 2 bell peppers green, yellow, orange, or red 1 large onion sweet, yellow, white, or red spray avocado or olive oil salt and pepper
Preheat oven to 400°F
Slice sausage into ½ inch pieces and place on half of a baking sheet
Slice bell peppers and onion into thin strips and place on other half of baking sheet. Spray with avocado or olive oil and season with salt and pepper
Bake at 400° for 20-25 minutes, until veggies are soft and sausage is warmed through
Serve with white rice, cauliflower rice, or mac n cheese
