Crust 1 package Schar gluten free honey grahams or 2 cups graham cracker crumbs ½ cup butter melted (1 stick) Cheesecake Filling 24 ounces cream cheese softened (3 bricks) 1½ cups powdered sugar confectioners sugar 1 teaspoon vanilla extract ¼ cup lime juice 1 cup whipped topping Cool Whip lime zest for topping optional
Crust Pulse graham crackers in food processor until they are fine crumbs
Slowly add in melted butter until incorporated
Press mixture into an even layer in bottom of pie dish using the bottom of a glass
Set aside
Cheesecake Filling Add softened cream cheese to large mixing bowl and mix on low speed until smooth
Add powdered sugar ½ cup at a time and mix on low speed until combined
Add vanilla extract and lime juice and mix on medium speed until combined and smooth
Fold in whipped topping
Add filling to center of pie pan and spread out evenly over crust
Top with lime zest, optional
Cover and refrigerate for at least 4 hours before serving to allow cheesecake to set
