Gluten Free Beef Fajita Bowl

  • 1 pound beef strips see above for options and shortcuts
  • 1 large onion cut into strips
  • 1 large bell pepper cut into strips
  • avocado oil spray
  • 1 packet fajita seasoning see above for homemade recipe
  • ¼ cup water
  • 2 cups cooked white rice


  • Spray a large skillet with avocado oil and then add beef strips, onion strips, and bell pepper, and turn heat to medium
  • Stirring often, cook until veggies are tender and meat has cooked through
  • While beef and veggies are cooking, add 1 cup white rice and 2 cups water to a medium saucepan and turn heat to medium high. Once boiling, turn heat to low and cover to simmer for about 5-10 minutes until rice has absorbed all of the water. Fluff the rice with a fork and set aside.
  • Turn heat to low on skillet with meat and veggies, and add fajita seasoning and water. Stir to coat the meat and veggies
  • Allow to simmer for a few minutes until sauce has thickened
  • Serve immediately over white rice
  • Top with guacamole, sour cream, pico, salsa, tortilla strips or chips, jalapeño slices, shredded cheese
