Topping
1shallotfinely diced
4tablespoon⅓ less fat cream cheesesoftened

Instructions
Making Topping
Peel and thinly slice shallot
Add sliced shallot to saucepan with spray oil and cook on medium heat, stirring occasionally until golden brown
Transfer cooked shallot to small mixing bowl and add ¼ cup shredded cheese and 2 tablespoon cream cheese
Set bowl with topping to the side
Prepare Chicken
Preheat oven broiler
Line a baking sheet with aluminum foil and spray with cooking oil, set aside
In a small bowl, combine onion powder and sea salt
Season both sides of chicken breasts with onion salt mixture
Heat a large pan with spray oil over medium-high heat and add chicken breasts
Cook chicken breasts for about 3 to 4 minutes per side until golden brown and cooked through
Transfer cooked chicken breasts to prepared baking sheet and spread topping over the top of the chicken, and then sprinkle the remaining ¼ cup shredded cheese evenly over the top of the cheese mixture
Place under broiler until cheese is melted, approximately 1-2 minutes
Serve with your favorite side dish for a complete meal your entire family will enjoy (except your picky kids who will only eat chicken if it's breaded and shaped like a dinosaur)
