Broccoli Cheese Casserole (gluten free)

Ingredients
  

  • 16 ounces broccoli washed and cut into bite sized pieces
  • 8 ounces Velveeta cheese
  • 8 tablespoons butter 1 stick, divided
  • 1 bag Schar Gluten Free Entertainment Crackers or Lance Gluten Free Original Crackers or 1 sleeve Ritz if not gluten free

Instructions
 

  • Preheat oven to 350°F
  • Place broccoli in a large pan and add about 1 inch of water to the bottom. Cover with a lid and turn heat to medium-low. Simmer for about 15-20 minutes, until broccoli is tender
  • Drain broccoli and add to an 8x8 or 9x9 casserole dish (no need to grease it)
  • Cut 4 tablespoons butter and 8 ounces Velveeta cheese into small cubes. Scatter the cubes over the broccoli
  • Using your hand or a meat tenderizer, crush bag of crackers into small pieces. Melt 4 tablespoons of butter and mix with crushed crackers in a medium mixing bowl
  • Top broccoli, cheese, and butter with the cracker mixture
  • Bake in oven at 350° for about 20-25 minutes, until cheese has melted and crackers are golden

Notes

Store leftovers in an airtight container in the fridge for up to 3 days
