Freezer Fudge

Creamy peanut butter and rich chocolate come together in this easy, no-bake freezer fudge. It tastes like a frozen peanut butter cup and can be made even lower in carbs with liquid stevia.

Ingredients
  

  • 1 cup creamy peanut butter
  • 2 tablespoons coconut oil solid
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • pinch salt
  • tablespoons cocoa powder

Instructions
 

  • Line a mini muffin pan with 12 mini muffin liners.
  • Add the peanut butter and coconut oil to a microwave-safe bowl. Microwave for approximately 1 minute, or until melted.
  • Stir until smooth and completely combined.
  • Stir in the maple syrup, vanilla extract, and salt.
  • Divide half of the mixture evenly among the 16 prepared muffin cups.
  • Stir the cocoa powder into the remaining peanut butter mixture.
  • Spoon the chocolate mixture evenly over the plain peanut butter layer.
  • Freeze for at least 1 hour, or until firm.
  • Transfer the fudge cups to a freezer-safe container and store them in the freezer.
