Instructions
Add the gluten free panko breadcrumbs to a dry skillet over medium-low heat. Toast for 2 to 4 minutes, stirring frequently, until lightly golden. Transfer the breadcrumbs to a small bowl.
Add the ground chicken to a large skillet over medium heat. Season it with salt and black pepper.
Cook the chicken for 6 to 8 minutes, breaking it into small pieces, until it is completely cooked and reaches an internal temperature of 165°F.
Place the chopped romaine lettuce in a mixing bowl. Add the Caesar dressing and toss until the lettuce is lightly and evenly coated.
Warm the gluten free tortillas according to the package directions.
Divide the seasoned ground chicken evenly among the tortillas.
Top each taco with Caesar-dressed romaine, shredded Parmesan cheese, and toasted gluten free breadcrumbs.
Serve immediately.

I use Siete almond flour tortillas, but you can use your favorite gluten free tortillas.
Confirm that the Caesar dressing and panko breadcrumbs are labeled gluten free.
Only add the dressing to the romaine lettuce, not to the ground chicken.
Toss the lettuce with the dressing immediately before serving to prevent it from becoming soggy.
Keep the chicken, tortillas, lettuce, dressing, Parmesan, and breadcrumbs separate when storing leftovers.
For a dairy-free version, use dairy-free Caesar dressing and dairy-free Parmesan.
