Ingredients
  

  • 1 pound ground chicken
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 3 cups chopped romaine lettuce
  • ? cup gluten free Caesar dressing or enough to coat the lettuce
  • ¼ cup gluten free panko breadcrumbs optional
  • ½ cup shredded Parmesan cheese
  • 6 gluten free tortillas

Instructions
 

  • Add the gluten free panko breadcrumbs to a dry skillet over medium-low heat. Toast for 2 to 4 minutes, stirring frequently, until lightly golden. Transfer the breadcrumbs to a small bowl.
  • Add the ground chicken to a large skillet over medium heat. Season it with salt and black pepper.
  • Cook the chicken for 6 to 8 minutes, breaking it into small pieces, until it is completely cooked and reaches an internal temperature of 165°F.
  • Place the chopped romaine lettuce in a mixing bowl. Add the Caesar dressing and toss until the lettuce is lightly and evenly coated.
  • Warm the gluten free tortillas according to the package directions.
  • Divide the seasoned ground chicken evenly among the tortillas.
  • Top each taco with Caesar-dressed romaine, shredded Parmesan cheese, and toasted gluten free breadcrumbs.
  • Serve immediately.

Notes

  • I use Siete almond flour tortillas, but you can use your favorite gluten free tortillas.
  • Confirm that the Caesar dressing and panko breadcrumbs are labeled gluten free.
  • Only add the dressing to the romaine lettuce, not to the ground chicken.
  • Toss the lettuce with the dressing immediately before serving to prevent it from becoming soggy.
  • Keep the chicken, tortillas, lettuce, dressing, Parmesan, and breadcrumbs separate when storing leftovers.
  • For a dairy-free version, use dairy-free Caesar dressing and dairy-free Parmesan.
