Everything tastes better in a bowl! This Mediterranean Bowl Recipe is easy to put together, loaded with healthy ingredients, and tastes amazing! And with a few shortcuts, it can be made very quickly! It’s naturally gluten free, you can make it low carb, and it can be made dairy free or even vegan as well! A win win for everyone!

Shawarma Marinade
¼cupolive oil
1lemon, juicedor 2 tablespoons lemon juice
1tablespoonminced garlic
½teaspoonsalt
½teaspoonblack pepper
1teaspooncumin
1teaspoonpaprika
½teaspoonturmeric
¼teaspooncrushed red pepper flakes
Instructions
Preheat oven to 400°F
Make shawarma marinade by mixing all marinade ingredients together
Toss beef or chicken strips with shawarma marinade and place on half of sheet pan
Place onion strips on other half of sheet pan, spray with avocado or olive oil spray
Place sheet pan in oven and bake at 400° for about 20 minutes until onions are tender and meat has cooked through
Cook rice according to package directions
Make tzatziki sauce if using homemade recipe (see above for link to recipe)
Start assembling your Mediterranean Bowl by adding cooked white rice to a bowl
Top with cooked chicken or beef and onions
Add hummus, pico, olives, feta, and tzatziki sauce
Enjoy immediately! Makes 4 servings
Store all leftovers in an airtight container in the fridge for up to 3 days
