Mediterranean Bowl Recipe
Everything tastes better in a bowl! This Mediterranean Bowl Recipe is easy to put together, loaded with healthy ingredients, and tastes amazing! And with a few shortcuts, it can be made very quickly! It’s naturally gluten free, you can make it low carb, and it can be made dairy free or even vegan as well! A win win for everyone!

What you need to make this Mediterranean Bowl Recipe:
- White rice: I prefer basmati or jasmine rice for a Mediterranean Bowl, but you can use whatever white rice you like best. Or you could even use brown rice! This step is really about preference.
- Beef or Chicken: I’ve made this Mediterranean Bowl Recipe using both, sometimes I’ve even combined the two! It’s really just about what you prefer. For the beef, you can use a flank steak and slice it into strips.
- Shawarma Marinade (optional): this step is optional, but it tastes so good that I don’t know why you would want to leave it out! This recipe for shawarma can be used with with either beef or chicken and it cooks with the onions on a sheet pan in the oven! Shawarma Marinade ingredients are listed below
- Onions: you can leave these out completely if you want to make this meal quickly, or you can throw them on a sheet pan with your meat, spray with oil, and bake at 400° until softened
- Hummus: I just use the store-bought stuff. Plain is my fave, but you can use YOUR favorite flavor
- Pico: ok, so this isn’t really a Mediterranean Bowl ingredient, but the chopped up tomatoes and onions taste great in this recipe. I usually dice some cucumber, mix it with the pico, and add it to the bowl. My favorite Mediterranean restaurant serves diced cucumbers and tomatoes in their bowls, and that is what inspired the pico (it’s easier). But you could just dice some cucumbers, tomatoes, and onions, and add them as well
- Kalamata olives: you can buy them pitted and sliced, so all you have to do is put them on the bowl
- Feta: buy it crumbled and sprinkle it on
- Tzatziki sauce: you can use store-bought or make your own. This tzatziki sauce recipe is very easy and tastes amazing!
Shawarma Marinade Recipe:
- 1/4 cup olive oil
- 1 lemon, juiced (about 2 tablespoons lemon juice)
- 1 tablespoon minced garlic (use the jarred stuff from the grocery or 3 cloves fresh garlic)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon crushed red pepper flakes
- Mix all ingredients together and pour over meat. Toss to combine

Shortcuts:
- Rice: Use a packet that cooks in the microwave in 90 seconds
- Meat: Use a rotisserie chicken, or pre-cooked chicken or beef strips and add shawarma marinade if you want extra flavor or just omit the marinade completely for a quick and easy meal. The fully cooked Sous Vide Sirloin strips from Costco are great in this bowl recipe!
- Tzaziki Sauce: you can buy it at the store instead of making it fresh
- Kalamata Olives: buy the ones that are already pitted and sliced
How to customize for dietary restrictions:
- Use tofu and dairy free yogurt for a vegan Mediterranean Bowl. You can omit the feta or use a dairy free feta
- Use dairy free yogurt for the tzatziki sauce to make this recipe dairy free. You can omit the feta or use a dairy free feta for this recipe
- If using a packet of rice, make sure it’s gluten free for a gluten free diet
- For a low carb Mediterranean Bowl, use cauliflower rice and omit the hummus. You can also use a low carb plain yogurt for the tzatziki sauce
How to make this Mediterranean Bowl Recipe:
- Preheat oven to 400°F
- Toss beef or chicken strips with shawarma marinade and place on half of sheet pan
- Place onion strips on other half of sheet pan, spray with avocado or olive oil spray
- Place sheet pan in oven and bake at 400° for 20-25 minutes until onions are tender and meat has cooked through
- Cook rice according to package directions
- Make tzatziki sauce if using homemade recipe (see above for link to recipe)
- Start assembling your Mediterranean Bowl by adding cooked white rice to a bowl
- Top with cooked chicken or beef and onions
- Add hummus, pico, olives, feta, and tzatziki sauce
- Enjoy immediately! Makes 4 servings
- Store all leftovers in an airtight container in the fridge for up to 3 days

- 1 pound chicken breast tenderloins or beef strips
- 1 large onion cut into strips
- Shawarma Marinade optional
- 2 cups cooked white rice
- 1 cup hummus
- 1 cup pico or diced tomatoes and cucumbers
- 1 cup sliced kalamata olives
- 1 cup feta cheese
- tzatziki sauce, top with as much or as little as you like! link to homemade recipe above
Shawarma Marinade
- 1/4 cup olive oil
- 1 lemon, juiced or 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
