    Easy Healthy Lasagna {gluten free}

    I used to think Lasagna was a complicated meal to make, so I just avoided making it. But a few weeks, I passed some green lentil lasagne noodles in the grocery store, and I couldn't pass them up! The noodles are gluten free, high in protein, and overall a healthier option, so I decided to make a healthy lasagna that was also super simple to make.

    So let's talk NOODLES: To be honest, you can use any oven-ready lasagna noodles you want for this recipe. There are some good ones and some not so good ones on the market. Check out my gluten free pasta guide for a list of the ones I have tried and recommend.

    MEAT: I used 93% lean ground turkey for this recipe, but you can use any lean meat you like. 99% lean ground turkey, 94% lean ground beef, ground chicken...these are all great options for this recipe!

    SAUCE: I'm a sucker for Rao's Marinara! But you can use your favorite marinara for this recipe, just make sure you have 4 cups of it.

    CHEESE: Let's face it, no lasagna is complete with layers of cheese! I kept it simple and scaled back the amount of cheese to make this recipe a lot healthier. Just two cups of shredded mozzarella and a 6 ounce tub of feta crumbles is all I used to make this delicious lasagna. I know feta isn't a typical lasagna cheese, but it adds a depth of flavor that truly makes this lasagna one your family will ask for over and over again! Even my toddler eats this lasagna and asks for more!

    That's all you need: noodles, meat, sauce, and cheese...I told you it's a simple recipe!

    Easy Healthy Lasagna {gluten free}

    A healthy lasagna recipe that's easy to make!

    Ingredients
      

    • 1 box gluten free oven-ready lasagne noodles I use green lentil lasagne noodles for this recipe
    • 1 pound 93% lean ground turkey
    • 2 teaspoons garlic salt I use Lowry's
    • 32 ounces marinara I use Rao's
    • 2 cups shredded mozzarella cheese
    • 6 ounces crumbled feta cheese

    Instructions
     

    • Preheat oven to 400 degrees Fahrenheit
    • Add one cup marinara to bottom of 8x8 casserole dish and spread out evenly
    • Heat a medium skillet to medium heat and spray with non-stick cooking spray (I use spray olive or avocado oil)
    • Add ground turkey and garlic salt to skillet and cook until meat is no longer pink, stirring often
    • Add remaining 3 cups of marinara to cooked turkey and stir to combine
    • Add layer of lasagna noodles to casserole
    • Top noodles with half of the meat and marinara mixture and spread out evenly
    • Top the meat with 1 cup shredded mozzarella
    • Add another layer of noodles
    • Top with remaining meat and marinara mixture
    • Continue topping with 1 cup shredded mozzarella and 6 ounces feta cheese
    • Bake uncovered at 400 degrees for 40 minutes
    • Allow to cool for 5 minutes before serving
