    Who doesn't love a good instant pot recipe? This Keto Chicken Broccoli Casserole Instant Pot recipe is a quick and easy weeknight meal your whole family will love.

    This instant pot chicken recipe is on regular rotation in my house because it's a complete meal made in one pot! I love one pot meals for easy cleanup. Plus, when cooking in the instant pot, it cooks while you do other last minute things around the house, like pack lunches for the next day.

    Cooked chicken: this is a great use for leftover chicken breasts, chicken thighs, rotisserie chicken, or even frozen fully cooked chicken. If you only have fresh chicken on hand, boil it for about 15-20 minutes until no longer pink, drain, and cut into bite-sized pieces or shred. If putting raw chicken directly in the instant pot, let the instant pot do a natural release instead of manually releasing after the cook time to ensure the chicken cooks through. Pro tip for easy shredded chicken: add cooked chicken to a large bowl or bowl of your stand mixer, and using hand mixer or stand mixer, mix until chicken is shredded.

    Cauliflower rice: that's how we keep this keto chicken broccoli casserole low in carbs, but if you're not cutting carbs, cooked white rice tastes great in this recipe. I prefer making this recipe with broccoli rice and omitting the fresh broccoli florets

    Chicken broth: I like using bone broth for the extra protein, but any chicken broth or chicken stock will do (pro tip: add extra broth if you want a soup-like consistency)

    Cream of chicken soup: Pacific cream of chicken soup is gluten free and tastes amazing

    Broccoli: frozen broccoli is great to keep on hand for dinners like this, but fresh broccoli works well in this dish too. I like to pulse it in the food processor to turn it into broccoli rice (this is also a great way to get your kids to eat more veggies because they can't really tell they're there)

    Salt: I like my seasonings, especially salt, but if you don't like a lot of salt or you're using a broth that is not low sodium, you will want to adjust the salt in this recipe

    Garlic powder: if you don't have garlic powder in your pantry, you need to get some! It adds a ton of flavor to most recipes

    Black pepper: don't like pepper, leave it out!

    Cheese: cheddar is my fave for this recipe, but cream cheese, or any extra cheese you have in your fridge that needs to be used up will work beautifully. Parmesan adds a nutty flavor that I just love

    How to make this easy keto chicken broccoli casserole

    1. Add broccoli, chicken, and rice to instant pot
    2. Mix broth, soup, and spices together to create a creamy sauce and pour over top (you have to have at least one cup of liquid in your instant pot for it to cook properly)
    3. Set Instant Pot to manual for 10 minutes
    4. Manually release (use the quick release option) after the 10 minutes of cook time and stir in cheddar until it’s melted
    5. If you don't want to eat right away, turn your pressure cooker to the slow cooker mode to keep this low carb casserole warm until ready to serve

    Favorite toppings and add-ins for this keto casserole

    Heavy cream: this will add a creaminess to the casserole and give it a more soup-like consistency. I recommend adding ¼ cup at a time and adjusting your salt to taste

    Almond milk: like heavy cream, almond milk will add a creaminess and thin out the casserole turning it into soup

    Cheese: add shredded cheese to the top when serving if you like it extra cheesy (that's how we do it in my house!)

    Sour cream: a dollop stirred in or on top when serving adds a tart creaminess that I live for

    Parmesan: parmesan cheese is such a nutty cheese that it adds the perfect flavor when sprinkled over top of this dish just prior to serving

    This is a great make-ahead meal for meal prep. Let casserole cool to room temperature, store in airtight containers in fridge for 3-5 days. To freeze, add to freezer safe containers and store in freezer for up to 3 months.
