    Low Carb Chicken Cordon Bleu Recipe

    Chicken Cordon Bleu is such a classic iconic dish, but it doesn’t get much recognition these days due to the low carb craze, but it should! This Low Carb Chicken Cordon Bleu Recipe is one of the best keto friendly recipes you'll ever eat! And it's gluten free too!

    LOW CARB CHICKEN CORDON BLEU RECIPE

    Traditional Chicken Cordon Bleu is made with bread crumbs, and most low carb recipes are made with almond flour or crushed pork rinds, but this version is unbreaded and baked, making it a bit healthier as well as gluten free and keto friendly. So if you're following a keto diet, this low-carb recipe is for you!

    This is a delicious meal your entire family will love and will ask for again and again!

    WHAT INGREDIENTS YOU NEED TO MAKE KETO CHICKEN CORDON BLEU:

    • 4 4oz boneless chicken breasts (2 8oz breasts cut in half lengthwise works perfectly)
    • 4 slices of ham, regular slice (Boar's Head deli meats are all gluten free)
    • 4 slices of Swiss cheese
    • Salt and pepper to taste
    • 2 tablespoons butter
    • 1 cup heavy whipping cream
    • ½ cup grated parmesan cheese
    • 2 teaspoons dijon mustard 
    • ¼ teaspoon black pepper
    • 1 teaspoon cornstarch

    HOW TO MAKE BAKED CHICKEN CORDON BLEU:

    • Preheat oven to 400°F
    • Season both sides of the chicken breasts with salt and pepper

    • Place seasoned chicken on a greased baking sheet and bake for 12-15 minutes per side, until no longer pink inside
    • While chicken is baking, make the creamy sauce by melting butter in a medium saucepan and stirring in the heavy cream

    • Add the parmesan cheese, black pepper, dijon mustard, and cornstarch, and stir until cheese has melted and sauce has thickened
    • After chicken has baked, turn oven broiler to high 
    • Top each cooked chicken breast with one slice of ham and one slice of cheese

    STORING LEFTOVERS

    Store leftovers in an airtight container in the fridge for up to 3 days. I recommend glass food storage containers because you can just remove the lid and reheat your leftover in the dish they were stored in.

    CHICKEN CORDON BLEU CASSEROLE

    Keto Chicken Cordon Bleu casserole is easy to make and tastes delicious!

    1. Preheat oven to 400°F
    2. Make the dijon cream sauce on your stovetop by adding butter to a saucepan and melting it over medium-high heat. Stir the heavy cream into the melted butter. Add the parmesan cheese, black pepper, dijon mustard, and cornstarch, and stir until cheese has melted and sauce has thickened. Set aside
    3. Generously grease an 8x8 casserole dish with avocado or olive oil. Add chicken cutlets to the bottom of the dish and arrange in a single layer with the cutlets touching each other but not overlapping. Season with salt and pepper
    4. Lay slices of ham on top of chicken, completely covering chicken (it's ok to overlap the ham and cheese slices)
    5. Add Swiss cheese slices on top of the ham
    6. Pour creamy dijon sauce on top of cheese slices and spread into an even layer
    7. Cover the casserole dish with aluminum foil and bake at 400°F for 25 minutes
    8. Uncover the dish and bake another 5 to 10 minutes until cheese and cream sauce are bubbling and golden brown

    If you are short on time and only cooking for one or two people, you're going to love this shortcut chicken cordon bleu for two recipe! Grab a rotisserie chicken from your grocery store (check with the deli to verify the rotisserie chicken is gluten free) and remove the skin from the breast meat. Remove the chicken breasts and place on a baking sheet. This is also a great way to give new life to leftover chicken. Top each piece of chicken with ham and cheese slices and then place under your oven broiler to melt the cheese (use a lower heat . Make the dijon sauce while cheese is melting and top with the chicken breasts with the sauce prior to serving!
