Add vinegar and honey to a small saucepan and heat to medium high, stir occasionally
When the vinegar mixture starts to boil, reduce heat to low
Stir often until mixture thickens and coats the back of the spoon
Remove saucepan from burner and set aside
For the chicken
Heat a grill or skillet to medium-high heat and spray with cooking oil
Mix italian seasoning and seasoned salt together and season both sides of chicken breasts
Grill or sautee chicken until done, about 5-7 minutes per side
Turn grill or skillet to low heat and place one slice of fresh mozzarella on each chicken breast allowing it to melt
In separate pan, saute cut tomatoes on medium heat for about 1 minute and season with salt and pepper
Transfer chicken to serving platter and top with tomatoes, basil, and drizzle of balsamic glaze
