Caprese Chicken with White Balsamic Glaze
Ingredients
- 6 thin chicken breasts
- 6 slices fresh mozzarella cheese
- 1 tablespoon italian seasoning
- ½ tablespoon seasoned salt
- 1 cup grape tomatoes, cut up
- spray cooking oil
- salt
- pepper
- basil leaves
White Balsamic Glaze
- ½ cup white balsamic vinegar
- 1 tablespoon honey
Instructions
Make the balsamic glaze
- Add vinegar and honey to a small saucepan and heat to medium high, stir occasionally
- When the vinegar mixture starts to boil, reduce heat to low
- Stir often until mixture thickens and coats the back of the spoon
- Remove saucepan from burner and set aside
For the chicken
- Heat a grill or skillet to medium-high heat and spray with cooking oil
- Mix italian seasoning and seasoned salt together and season both sides of chicken breasts
- Grill or sautee chicken until done, about 5-7 minutes per side
- Turn grill or skillet to low heat and place one slice of fresh mozzarella on each chicken breast allowing it to melt
- In separate pan, saute cut tomatoes on medium heat for about 1 minute and season with salt and pepper
- Transfer chicken to serving platter and top with tomatoes, basil, and drizzle of balsamic glaze
Notes
Notes: If you don't want to take the time to cut up and sauté tomatoes, a spoonful of pico de gallo will work in a pinch and add some heat to the dish!
