Ingredients
  

  • 10 ounces fresh mozzarella cut into bite-sized pieces or use mozzarella pearls
  • 8 ounces grape tomatoes
  • 1/3 cup fresh chopped basil or 1/2 tbsp dried basil
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions
 

  • Cut grape tomatoes in half lengthwise and place in large bowl
  • Cut mozzarella into bite-sized pieces (or use mozzarella pearls) and add to bowl
  • Add 1/3 cup fresh chopped basil or 1/2 tbsp dried basil
  • Add 2 tbsp balsamic vinegar 
  • Drizzle with olive oil and stir
  • Add salt and pepper to taste and stir again
  • Cover and place in fridge for 15 minutes prior to serving to allow ingredients to meld together
  • Makes 2 servings

Notes

Store leftovers in airtight container in fridge for up to 3 days
