I remember the first time I had Caprese Salad. I was visiting some friends in Chicago for the Fourth of July, and we had a buffet of appetizers while we were waiting for the burgers to finish grilling. When I saw a big bowl of cheese and tomatoes sitting on the table topped with fresh basil, I knew I had to try it, and I think my life changed in that moment because now I crave Caprese Salad regularly! It’s one of my favorite low carb snacks!

If fresh mozzarella isn’t your thing, feta and crumbled goat cheese taste delicious in this salad as well!

I have used all types of tomatoes in this Caprese Salad recipe, include red cherry tomatoes, yellow grape tomatoes, chopped homegrown tomatoes, and chopped Roma tomatoes. Depending on the season and what you have on hand, choose the tomato that you prefer most!

One time I accidentally grabbed white balsamic vinegar at the grocery store instead of regular balsamic vinegar, and it turned out to be a very happy accident. The white balsamic vinegar gives the Caprese Salad a much milder flavor while still keeping the authentic flavors in tact.

What ingredients you need to make Caprese Salad:

  • Fresh mozzarella cheese
  • Grape tomatoes
  • Fresh basil
  • Balsamic vinegar
  • Olive oil
  • Salt and pepper

How to make Caprese Salad:

  1. Cut grape tomatoes in half lengthwise and place in large bowl
  2. Cut mozzarella into bite-sized pieces (or use mozzarella pearls) and add to bowl
  3. Add 2 tbsp balsamic vinegar 
  4. Add 1/3 cup fresh chopped basil or 1/2 tbsp dried basil
  5. Drizzle with olive oil and stir
  6. Add salt and pepper to taste and stir again
  7. Cover and place in fridge for 15 minutes prior to serving to allow ingredients to meld together
  8. Makes 2 servings

Ingredients
  

  • 10 ounces fresh mozzarella cut into bite-sized pieces or use mozzarella pearls
  • 8 ounces grape tomatoes

Store leftovers in airtight container in fridge for up to 3 days
