Ingredients
  

Pork Chops

  • 1 pound boneless pork chops
  • Salt and black pepper to taste
  • Olive oil or avocado oil cooking spray

Dijon Cream Sauce

  • 2 tablespoons avocado oil
  • ¼ cup diced onion
  • 1 cup heavy cream
  • ½ cup gluten free chicken bone broth divided
  • 2 tablespoons Dijon mustard
  • ½ tablespoon cornstarch
  • ¼ teaspoon salt
  • ? teaspoon black pepper

Instructions
 

  • Pat the pork chops dry and season both sides with salt and black pepper.
  • Preheat a grill or skillet over medium-high heat and lightly coat it with olive oil or avocado oil spray.
  • Cook the pork chops for approximately 5 minutes per side, or until seared and the thickest part reaches 145°F.
  • Remove the pork chops from the heat and allow them to rest for at least 3 minutes.
  • Add the avocado oil and diced onion to a medium skillet. Sauté over medium heat for 3–5 minutes, until the onion is translucent.
  • Reserve 2 tablespoons of the cold bone broth and whisk it with the cornstarch until smooth.
  • Add the remaining broth, heavy cream, Dijon mustard, salt, and black pepper to the onions. Whisk to combine.
  • Stir in the cornstarch slurry and bring the sauce to a gentle boil.
  • Reduce the heat to low and simmer for approximately 2 minutes, stirring frequently, until slightly thickened.
  • Spoon the creamy Dijon sauce over the rested pork chops and serve immediately.
