Ingredients
  

  • 1 cup water
  • 1 cup organic cane sugar
  • 1 cup sliced cucumber Persian cucumbers preferred
  • 1/2 cup fresh mint leaves

Instructions
 

  • Combine sugar and water in a small saucepan over medium heat. Stir occasionally until the sugar dissolvescompletely.
  • Bring to a low boil, then reduce heat and simmer for 10 minutes to let the blend of flavors infuse.
  • Once the mixture is smooth, add the cucumber slices and mint leaves. Stir gently.
  • Remove from heat and let it steep at room temperature for another 15–20 minutes.
  • Strain the syrup through a fine mesh strainer into a glass jar or mason jar. Discard the solids.
  • Let cool completely before using in drinks.
