1large onioncut into strips
1large bell peppercut into strips
avocado oil spray
1packetfajita seasoningsee above for homemade recipe
1/4cupwater
2cupscooked white rice
Instructions
Spray a large skillet with avocado oil and then add beef strips, onion strips, and bell pepper, and turn heat to medium
Stirring often, cook until veggies are tender and meat has cooked through
While beef and veggies are cooking, add 1 cup white rice and 2 cups water to a medium saucepan and turn heat to medium high. Once boiling, turn heat to low and cover to simmer for about 5-10 minutes until rice has absorbed all of the water. Fluff the rice with a fork and set aside.
Turn heat to low on skillet with meat and veggies, and add fajita seasoning and water. Stir to coat the meat and veggies
Allow to simmer for a few minutes until sauce has thickened
Serve immediately over white rice
Top with guacamole, sour cream, pico, salsa, tortilla strips or chips, jalapeño slices, shredded cheese
