Gluten Free Beef Fajita Bowl
If you’re looking for a gluten free, dairy free, macro-friendly beef fajita bowl, then you have come to the right place! You can even make this meal low carb by using cauliflower rice instead of white rice! Everyone wins with this recipe, so head to the grocery store and whip up this easy meal for dinner tonight!
What ingredients you need to make Gluten Free Beef Fajita Bowls:
- 1 pound beef strips
- 1 large onion, cut into strips
- 1 large bell pepper, cut into strips
- Avocado oil spray
- 1 packet fajita seasoning (McCormick Organics is gluten free)
- 1/4 cup water
- 2 cups cooked white rice
- Guacamole, cheese, sour cream, pico, salsa, jalapeño slices, tortillas, lettuce for serving
How to make Gluten Free Beef Fajita Bowls:
- Spray a large skillet with avocado oil and then add beef strips, onion strips, and bell pepper, and turn heat to medium
- Stirring often, cook until veggies are tender and meat has cooked through
- While beef and veggies are cooking, add 1 cup white rice and 2 cups water to a medium saucepan and turn heat to medium high. Once boiling, turn heat to low and cover to simmer for about 5-10 minutes until rice has absorbed all of the water. Fluff the rice with a fork and set aside.
- Turn heat to low on skillet with meat and veggies, and add fajita seasoning and water. Stir to coat the meat and veggies
- Allow to simmer for a few minutes until sauce has thickened
- Serve immediately over white rice
- Top with guacamole, sour cream, pico, salsa, tortilla strips, jalapeño slices, shredded cheese
Fajita Seasoning (if you can’t find a gluten free packet):
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1 teaspoon ground paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- Pinch of cayenne, optional
- Zest of 1 lime
Add all ingredients to a small bowl and stir to combine. This will be the equivalent of 1 fajita seasoning packet.
Beef
Choosing the right beef is the key to a good beef fajita bowl. If you have a Costco membership, grab some of the Sous Vide Sliced Grass-Fed Beef Sirloin. It’s pre-cooked so it makes making these fajita bowls a breeze!
If you don’t have a Costco near you, you can use any beef strips you can find. My grocery store never seems to have beef strips in stock, so I’ve learned to improvise. If you have to improvise, grab a flank steak or skirt steak. Pop it in your freezer for about 30 minutes so it’s easier to slice and then slice it into thin strips.
Can I make it with Chicken instead?
If you want to make chicken fajita bowls instead, just replace the beef strips with sliced chicken! For a quick and easy substitution, grab a bag of frozen fully cooked chicken fajita strips from your grocery’s freezer section!
Shortcuts
I like to make sheet pan fajitas and then add the meat and veggies to a bowl with rice instead of putting them on tortillas.
Use rice packets that cook in 90 seconds. They come in a variety of flavors, just make sure the one you choose is gluten free!
Buy store-bought guacamole instead of making it from scratch.
Pick up a package of sliced onions and peppers from the produce department to save a step in cutting them up yourself.
