Gluten Free S’mores Bars

Summertime is here and that means cookouts and picnics with family and friends! Wow everyone this year when you show up with these Gluten Free S’mores Bars! They’re easy to make, less messy, and a fun treat for everyone! If you can eat gluten, feel free to use regular graham crackers. Need a vegan or dairy free option, use vegan butter, marshmallows, and chocolate, and make sure your graham crackers are dairy free as well!
As with all of my recipes, I tested these S’more Bars out on my kiddos. The bonus kid couldn’t get enough, and the little one loved that he could hold the s’more and eat it without it getting too messy! I think I enjoy these gluten free s’mores as much as the kids do!
Gluten Free S’mores Bars are easy to make, you only need 4 ingredients! So let’s get straight to this recipe so you can start enjoying this delicious summer treat!
What you need to make Gluten Free S’mores Bars:
- 1 box gluten free graham crackers (Schar is dairy free, Pamela’s is not. Both are delicious!)
- 1 stick butter, melted (use vegan butter or 1/3 cup melted coconut oil for dairy free)
- Marshmallows
- 1-2 cup chocolate chips (depends on how thick you want the chocolate to be) (EnjoyLife mini chocolate chips are my favorite)
Graham Crackers:
Schar Gluten Free Honeygrams are dairy free and taste like traditional graham crackers.
Pamela’s Gluten Free Gluten Free Honey Grahams taste like a cross between a graham cracker and a molasses cookie. These contain MILK, so be aware of that if you are avoiding dairy for any reason.
Simple Mills Honey Cinnamon Sweet Thins are great for making any gluten free graham cracker crust. They are dairy free but do contain seeds and nuts.
Marshmallows:
Regular or mini marshmallows work for this recipe. There are many brands that are vegan, including Dandies. Dandies marshmallows are also free of food dyes and made with natural ingredients.
You can even use marshmallow cream if you prefer a thinner marshmallow layer! If using marshmallow cream, let your graham cracker crust firm up in the fridge for at least an hour before spreading on the cream. This will keep your crust and marshmallow cream separate.
Chocolate:
I use EnjoyLife Brand mini chocolate chips for everything. They are free of 14 top allergens, and they taste better than any chocolate I’ve ever eaten. They also melt easily in the microwave. But please feel free to use your favorite chocolate chips, chocolate bars, or chocolate melting wafers for the chocolate layer.
How to make Gluten Free S’mores Bars:
- Add graham crackers to food processor and pulse until they are fine crumbs
- Empty crumbs into 8×8 baking dish
- Melt stick of butter in microwave safe dish for 1 minute (be sure to cover the dish so the melted butter doesn’t splash all over your microwave)
- Pour the melted butter over the graham crackers and then stir to combine
- Press the buttery graham crackers into an even layer in the bottom of your baking dish
- Preheat oven broiler
- Top the crust with an even layer of marshmallows
- Place baking dish under oven broiler. Watch closely as marshmallow will roast quickly, and pull out of oven when marshmallow turn golden brown
- Add chocolate chips to microwave safe bowl and heat for 1 minute. Stir and then heat for another minute, then stir again.
- Pour melted chocolate over top of roasted marshmallows and spread into an even layer
- Place baking dish in fridge for at least one hour for crust and chocolate to set up
- Cut into squares and enjoy!









Traveling with S’mores Bars
If you plan to take the S’mores Bars to a picnic or cookout, make sure there is a place to keep them cool so the chocolate doesn’t melt. A cooler and some ice or ice packs will work just fine! Make sure you cover the baking dish with foil or plastic wrap to keep the bars fresh.
Storing Leftovers
Store leftover Gluten Free S’mores Bars in an airtight container in the fridge for up to 3 days!

- Food processor or a bag and a rolling pin to crush graham crackers
