    Gluten Free Mexican Pizza Recipe

    OMG y’all!!! When I was growing up, Mexican pizza from Taco Bell was one of my favorite meals! But then I had to give up gluten, and Taco Bell decided without my business, they couldn’t keep the Mexican pizza on the menu anymore…kidding! But in all seriousness, not being able to order a Mexican Pizza has sucked, so I decided to create my own…and I freaking nailed it!!! You can customize this Gluten Free Mexican Pizza Recipe to be healthy, dairy free, vegetarian, and even low carb!

    Gluten Free Mexican Pizza Recipe

    My hubby says this is one of his new favorite recipes, so I’ll be making it a lot from now on! And if I’m going to make a recipe often, it has to be delicious, easy to make, and healthy. And this Gluten Free Mexican Pizza recipe checks all of the boxes!

    So what makes this Gluten Free Mexican Pizza healthy? Well, I use Siete almond flour tortillas, lean ground turkey, fat free refried beans, and salsa to create a delicious meal that I feel good about eating. I also add a little shredded cheddar, but you can leave that out if you need a dairy free version. You could also use ground chicken or lean ground beef for this recipe. 

    If you’re looking to make this recipe low carb, you can use low carb tortillas, omit the beans, and add extra cheese. I strive to create meals that can be customized to fit most allergy and dietary restrictions. If you want to add a creamy base to this recipe that will replace the refried beans, a smear of cream cheese on the bottom is a delicious option.

    Need a vegetarian Mexican pizza option? Omit the meat, use refried beans, and add some black beans in place of the meat. You can even season the black beans with the taco seasoning and ranch dip mix to give it an authentic Mexican pizza flavor.

    What you need to make this Gluten Free Mexican Pizza Recipe with refried beans:

    • Flour tortillas: Siete Almond Flour tortillas are my favorite, and they're gluten and dairy free. Mission Almond Flour Tortillas are another amazing option!
    • Ground turkey: or lean ground beef
    • Taco seasoning: use 1 packet of 2 tablespoons of this homemade taco seasoning
    • Ranch dip mix: any packet will do, just check the label for allergens
    • Fat free refried beans: or any refried beans
    • Shredded cheddar cheese
    • Salsa: I prefer Cocina Fresca, but you can use your favorite brand!
    • Avocado or olive oil spray: if you don't have any spray, a drizzle of oil or a ½ tablespoon of melted butter works too

    How to top this Gluten Free Mexican Pizza Recipe:

    You can choose any toppings you want for this Mexican pizza recipe. Some of my faves are sour cream, fresh chopped cilantro, guacamole, and pico.

    My hubby likes to cut his pizza into little triangles and dip them in salsa rather than adding salsa to the top.

    How to make this Gluten Free Mexican Pizza Recipe:

    1. Spray the bottom of a medium skillet with avocado or olive oil spray and turn heat to medium. Add ground turkey and cook until browned throughout.
    2. Once meat has finished cooking, turn heat to low, add ¼ cup water, packet of taco seasoning mix and packet of ranch dip mix, and stir to combine. Keep on low heat until ready to assemble your pizzas
    3. Empty can of refried beans into a microwave safe bowl and cook on high fro 2 minutes. Stir
    4. Spread ½ cup refried beans on a flour tortilla
    5. Top the beans with 4 ounces of ground turkey
    6. Top the ground turkey with ¼ cup shredded cheddar cheese and place the tortilla in a skillet lightly sprayed with avocado or olive oil. Add another tortilla to the top of the cheese to create a “sandwich”
    7. Cook on medium heat until the bottom of the tortilla becomes golden, about 1 minute
    8. Carefully flip using a spatula and cook until the other tortilla becomes golden 
    9. Remove from heat and top with salsa
    10. Repeat for remaining tortillas
    11. Makes 4 Gluten Free Mexican Pizzas
    12. Add your favorite toppings before serving

    Ingredients
      

    • 1 pound lean ground turkey
    • 1 packet taco seasoning
    • 1 packet ranch dip mix or ranch seasoning
    • 1 can fat free refried beans 16 ounces (2 cups)
    • 1 cup shredded cheddar cheese
    • 1 cup salsa
    • 8 small-medium flour tortillas

    Instructions
     

    • Spray the bottom of a medium skillet with avocado or olive oil spray and turn heat to medium. Add ground turkey and cook until browned throughout.
