Gluten Free Dairy Free Healthy Muffins

A friend reached out to me and asked if I could create a healthy muffin mix she would feel good feeding to her children, and I was excited to accept and nail this challenge! These Gluten Free Dairy Free Healthy Muffins are treat you and your kids will enjoy!
Traditional muffin mixes are made with bleached flour and sugar, which aren’t the healthiest things to feed ourselves and our children. So I was honored to be tasked with creating a healthy muffin recipe that actually tastes good!
Let’s get straight to the recipe!
What ingredients you need to make Gluten Free Dairy Free Healthy Muffins:
- Almond flour
- Baking powder
- Salt
- Vanilla extract
- Eggs
- Maple syrup
- Avocado oil
- Unsweetened almond milk
- Mix-ins (blueberries, strawberries, chocolate chips)
Mix-ins:
- Blueberries
- Finely diced strawberries
- Chocolate chips (EnjoyLife mini chocolate chips are my fave)
- Macadamia nuts and white chocolate chips
- Pecans
- Petite diced pineapple and shredded coconut
- Sprinkles (only use 1/2 cup sprinkles)
How to make gluten free dairy free healthy muffins:
- Preheat oven to 350°F
- In a large mixing bowl, combine all ingredients (except the mix-ins) and stir to combine
- Fold in mix-ins
- Grease muffin tins or add paper liners
- Add 1/4 cup batter to regular muffin cups (makes 12 regular muffins or 24 mini muffins)
- For mini muffins, add 2 tablespoons batter to each muffin cup (baking time will be 14-20 minutes)
- Bake at 350°F for 22-26 minutes
- Allow to cool for 10 minutes before serving!
Storing Leftover Muffins
Leftover muffins can be stored in an airtight container or plastic zipper bag in your fridge for up to 3-5 days.
You can freeze muffins in a freezer safe container for up to 3 months. To thaw, place container in fridge overnight.

- 1/3 cup unsweetened almond milk
