Ingredients

  • 2 cups almond flour
  • 1/2 cup melted coconut oil
  • 1/4 cup almond butter incorporates better if warmed in microwave for 30 seconds
  • 3 tablespoons maple syrup
  • 1/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1/3 cup mini chocolate chips

Instructions

  • Add all ingredients to a large mixing bowl and mix with a spoon until combined. The dough will seem crumbly and that’s ok
  • Scoop out about 1 tablespoon of the “dough” and squeeze it in your hand a couple of times and then roll it into a ball (see video for a demonstration) (makes about 20 cookie dough bites)
  • Place cookie dough balls on a plate or baking sheet lined with parchment paper and place in fridge to set up for 30 minutes before serving
