Gluten Free Cookie Dough Energy Bites
I donโt know what to say about these Gluten Free Cookie Dough Energy Bites other than they are freaking delicious! Each batch makes 20 balls, and I canโt keep them in my house for more than a few days because we eat them so fast. They taste like cookie dough, but theyโre made with much healthier ingredients so you can feel good about feeding them to your kids and yourself.
What ingredients you need to make cookie dough bites:
- Almond flour
- Melted coconut oil
- Almond butter
- Maple syrup
- Coconut sugar
- Vanilla extract
- Salt
- Mini chocolate chips
A little more about the ingredients:
These gluten free cookie dough bites are naturally gluten free and vegan using the ingredients listed, but there are a few substitutions I will share with you to ensure you are making the best tasting cookie dough bites with ingredients you have on hand.
Almond flour: almond flour gives these energy bites a texture very similar to actual cookie dough. You can substitute oat or coconut flour, but the flavor and texture will be different
Coconut oil: refined coconut oil does not have a coconut flavor while unrefined coconut oil does. I have not made these bites using any other oils
Almond butter: if you melt the almond butter in the microwave for 30 seconds, it will blend with the ingredients a little more easily. If you donโt have or like almond butter, please use your favorite nut butter instead. Cashew butter tastes great in this recipe
Maple syrup: to keep these gluten free cookie dough bites vegan, youโll want to stick with pure maple syrup. But honey is a great substitution if you are not vegan
Coconut sugar: coconut sugar is a healthier alternative to brown sugar and gives these bites their authentic cookie dough flavor. If you want to use brown sugar instead, please feel free to do so
Vanilla extract: vanilla extract is a standard ingredient in every cook I bake, so I felt these cookie dough bites needed it as well. I do recommend pure vanilla extract versus imitation vanilla flavor for a more natural flavor
Salt: a pinch of salt brings out the sweetness in this recipe
Mini chocolate chips: Enjoy Life brand is my absolute favorite. They have the best chocolate flavor, are made with a few clean ingredients, and theyโre naturally gluten free and vegan
How to make gluten free energy bites:
- Add all ingredients to a large mixing bowl and mix with a spoon until combined. The dough will seem crumbly and thatโs ok
- Scoop out about 1 tablespoon of the โdoughโ and squeeze it in your hand a couple of times and then roll it into a ball (see video for a demonstration) (makes about 20 cookie dough bites)
- Place cookie dough balls on a plate or baking sheet lined with parchment paper and place in fridge to set up for 30 minutes before servingย
Optional add-ins:
This recipe is for chocolate chip cookie dough bites, but you can omit the chocolate chips and create different flavors of gluten free cookie dough bites using these optional add-ins:
Sprinkles: add sprinkles instead of chocolate chips to create birthday cake cookie dough bites! These sprinkles are dyed with fruits and veggies for a healthier alternative
Coconut: unsweetened shredded coconut is a great substitute or addition to these cookie dough balls
Chopped nuts: add some protein, fiber, and healthy fats by stirring in some finely chopped nutsย
Storing/Freezing:
Store the gluten free cookie dough bites in an airtight container or zip lock bag in the fridge for up to 2 weeks.ย
These bites will keep in the freezer in an airtight freezer safe container for up to 3 months. Thaw overnight in the fridge or eat frozen!
